    I’ve been drinking Irish whiskey for about as long as I’ve been alive, and it’s always been my favorite spirit. The smoky, spicy stuff is ideal in cocktails or on the rocks with a little water to open it up. But even more than that, Irish whiskey has an incredible history that goes back thousands of years, making it one of the world’s oldest distilled spirits. And while there are so many great bottlings these days (thanks to modern technology), there are some classics that any self-respecting drinker should have in their bar at all times:

    Redbreast is a 12 year old single pot still whiskey. It is made by Cooley distillery and it’s a blend of single pot still whiskeys that have been aged in bourbon barrels for 12 years.
